Yellow cucumber stir fried with spices and coconut

Ingredients

  • 1 small Yellow/Malabar cucumber, chopped to fine pieces
  • 3 Green Chilly, slit
  • Few Curry leaves
  • 1 cup grated Coconut
  • 1 teaspoon Kashmiri chilli powder
  • 1 pinch Turmeric powder
  • 1 pinch Cumin seeds
  • 4 Shallots
  • Salt to taste
  • 1 tablespoon Coconut oil
  • 1 teaspoon Mustard seeds
  • 2 whole Red chilly

Instructions

  1. Grind coconut, cumin, chili powder, turmeric powder, salt & shallots to a coarse paste.
  2. Mix this paste with cucumber green chilly and curry leaves.
  3. Heat oil in a pan and splutter mustard seeds.
  4. Add red chilies and curry leaves.
  5. Add cucumber mixture, mix well and cook covered for 5-7 mins.
  6. Remove lid and cook until the dish becomes dry.
  7. Garnish with curry leaves.
  8. Serve Vellarikka thoran with rice.
