Urad Dal Kachori
Urad Dal Kachori is a crispy and crunchy snack made by deep frying wheat flour dough stuffed with a spicy urad dal filling.

Ingredients
For dough:
- 1 cup Wheat flour
- 1 tablespoon Oil
- Salt to taste
For filling:
- 1/4 cup Urad dal, soaked for 3-4 hours
- 1/4 teaspoon Cumin seeds
- 1/2 inch Ginger, cut into thick pieces
- 1 Green chilli
- 2 pinches Asafetida
- 1/4 teaspoon Fenugreek powder
- Salt to taste
- 1/2 teaspoon Red chilli powder
- 1 teaspoon Coriander powder
- 1/2 teaspoon Garam masala
- 2 teaspoons Fennel powder
- 2 tablespoons Oil
- Oil for frying
Instructions
- Grind urad dal with ginger and green chilly.
- Heat oil. Crackle cumin seeds, asafetida, fenugreek powder and all the other spices. Mix well.
- Add urad dal mix and roast for 10 minutes. Add salt and mix well.
- Knead a dough by combining wheat flour, salt, oil and water. Cover and keep aside for 10 minutes.
- Take small portions of the dough, stuff it with urad dal filling and prepare kachoris.
- Heat ghee in a pan and deep fry the kachoris till golden brown on both sides.
- Serve Urad dal kachori with a curry of your choice.
