Sindhi Saibhaji
Sindhi style spinach dish, known as saibhaji cooked along with amaranth leaves

Ingredients
- 1 cup Spinach, finely chopped
- 1/2 cup Channa Dal, soaked for an hour
- 1/4 cup Moong dal, soaked for an hour
- 1/2 bunch Red Amaranth leaves / Laal Maat
- Khatta / chuuka, khatti paalak, few leaves
- Dill leaves / Sua, few leaves
- Fenugreek leaves, few
- 2 Onions
- 1 potato, chopped
- 2 Tomatoes, chopped
- 1 Brinjal, small chopped
- 1 tablespoon Oil
- 3 Green Chillies
- 1/4 teaspoon Turmeric Powder
- 1 teaspoon Coriander powder
- Salt to taste
- 1 teaspoon Ginger, grated
- Oil
- Cumin seeds
Instructions
- Pressure cook chopped vegetables, tomatoes, chopped green leaves, green chillies, ginger, dry spices and soaked dal till tender and cooked.
- Mash dal with wooden whisker. Temper with hot oil and fried cumin seeds.
- Serve Sindhi Saibhaji with rice or roti
