Shayya Biryani
Rice Biryani is a popular and common. Shayya Biryani uses thick vermicelli / shayya / shavige instead of rice. It is served along with raw mango coconut chutney .

Ingredients
- Fresh Mint leaves, chopped
- Few strands of saffron, soaked in water
- 1 teaspoon Ghee
- 1/4 cup onions, fried
- 1 teaspoon Lime juice
- 3/4 cup Yogurt
- 1/2 teaspoon Red chili powder
- 1/4 teaspoon Cumin powder
- 1/2 teaspoon Coriander powder
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Ginger garlic paste
- 3 tablespoons Oil
- Coriander leaves, chopped
- 3 Green chillies
- 1 onion, thin long chops
- 1/2 teaspoon Peppercorn
- 4 cardamom, whole
- 1 Bay leaf
- 1 Cinnamon, inch long stick
- 1/2 teaspoon Jeera / cumin seeds
- Salt - to taste.
- 1 cup Vermicelli / shevai / semige
Instructions
- Heat Oil and roast vermicelli till light brown.
- Add water and allow to cook. Pour saffron water over it. Keep aside
- Heat Oil and fry dry spices - cumin seeds, bay leaves, cardamom, pepper, cinnamon. Saute.
- Add remaining ingredients and stir.
- In a large pan, place a layer of vermicelli. Then add another layer of the mixture. Top it up with another layer of vermicelli.
- Cover and cook slowly for 5-10 minutes.
- Garnish with ghee, coriander leaves and fried onions.
- Serve Shayya Biryani hot along with chutney / raita.
