Rajgira Batata Wada
Rajgira Batata Vada is a popular snack which is made mostly during Navaratri fasting. It tastes delicious when served with coriander chutney or curd.
Ingredients
For filling
- 3 cups potatoes, boiled and mashed
- Oil
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1 sprig curry leaves
- 1 teaspoon green chili paste
- 1 teaspoon ginger paste
- Salt to taste
- Juice of half a lemon
- 1 tablespoon coriander leaves
- Oil for frying
For batter
- 2 cups rajgira /amaranth Flour
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon black pepper powder
- Salt to taste
Instructions
- Prepare the batter by mixing all the batter ingredients in a large bowl. Keep aside.
- Heat ½ tbsp oil in a pan. Splutter cumin seeds and curry leaves. Add green chilli paste, ginger paste and sauté for a minute.
- Add mashed potatoes, turmeric powder, coriander leaves, lemon juice, and salt. Mix well.
- Divide the mixture into small balls and keep aside.
- Heat oil. Dip the potato balls in the batter and deep fry them until they turn light golden brown.
- Serve rajgira batata vada hot with green chutney.
