Olya haldiche lonche
Simple pickle made from raw turmeric

Ingredients
- 2 kilograms raw turmeric
- 1 1/2 cups oil
- 1 1/2 tablespoons mustard seeds
- 7 fresh lemon
- 1/3 cup salt
- 3 teaspoons red chilli powder
- 4 tablespoons achari masala
- 1 1/2 cups sugar
Instructions
- Peel and slice all turmeric. Squeeze lemon juice over turmeric.
- Add salt, red chilli powder, Achari masala and sugar. Mix well.
- Heat oil. Splutter mustard seeds for 30 seconds. Switch off and let cool.
- Pour oil over turmeric. Mix well.
- Serve olya haldiche lonche fresh.
- Store in air tight container and refrigerate.
