Methi Makhana Pulao

Methi Makhana pulao is healthy recipe for dinner. Fragrant rice cooked with methi, vegetables and makhana.

Ingredients

  • 1 cup Basmati rice, washed and soaked in water for 1/2 hour
  • 1 cup Methi / fenugreek leaves, chopped
  • 1 1/2 cups makhana, roasted crisp
  • 1 carrot, chopped finely
  • 1/4 cup Green peas
  • 3 tablespoons oil
  • 1 teaspoon Cumin seeds
  • Cashews – few
  • 2 cinnamon sticks, inch long
  • 4 green chillies, chopped
  • 1 teaspoon ginger garlic paste
  • 1 cardamom pod
  • 1 bay leaf
  • 5 cloves
  • 1/2 teaspoon Fennel seeds
  • 1 Onion, medium size, chopped finely
  • Salt as per taste
  • 1 cup Curd
  • 1 tablespoon Coriander leaves
  • 1/2 cup Mint leaves

Instructions

  1. Heat oil in a pressure cooker. Splutter cumin seeds, fennel seeds, cinnamon stick, cardamom pod, cloves, bayleaf, cashews and saute
  2. Add ginger garlic paste, green chillies, onion and saute till translucent.
  3. Add carrots, green peas, makhana and saute.
  4. Add washed methi leaves, mint leaves and coriander leaves. Mix till leaves wilt.
  5. Add curd, mix and cook for 2 minutes.
  6. Add soaked rice and mix. Add sufficient water and salt.
  7. Pressure cook for 2 whistles.
  8. Serve methi makhana pulao with raita.
