Methi Makhana Pulao
Methi Makhana pulao is healthy recipe for dinner. Fragrant rice cooked with methi, vegetables and makhana.

Ingredients
- 1 cup Basmati rice, washed and soaked in water for 1/2 hour
- 1 cup Methi / fenugreek leaves, chopped
- 1 1/2 cups makhana, roasted crisp
- 1 carrot, chopped finely
- 1/4 cup Green peas
- 3 tablespoons oil
- 1 teaspoon Cumin seeds
- Cashews – few
- 2 cinnamon sticks, inch long
- 4 green chillies, chopped
- 1 teaspoon ginger garlic paste
- 1 cardamom pod
- 1 bay leaf
- 5 cloves
- 1/2 teaspoon Fennel seeds
- 1 Onion, medium size, chopped finely
- Salt as per taste
- 1 cup Curd
- 1 tablespoon Coriander leaves
- 1/2 cup Mint leaves
Instructions
- Heat oil in a pressure cooker. Splutter cumin seeds, fennel seeds, cinnamon stick, cardamom pod, cloves, bayleaf, cashews and saute
- Add ginger garlic paste, green chillies, onion and saute till translucent.
- Add carrots, green peas, makhana and saute.
- Add washed methi leaves, mint leaves and coriander leaves. Mix till leaves wilt.
- Add curd, mix and cook for 2 minutes.
- Add soaked rice and mix. Add sufficient water and salt.
- Pressure cook for 2 whistles.
- Serve methi makhana pulao with raita.
