Litti Choka
Roasted stuffed wheat flour dough served with spiced mashed potatoes

Ingredients
For Choka
- 3 Potatoes
- 1 Onion
- 4 Garlic, cloves
- 1 Tomato
- 3 Green Chilly
- 1/4 cup Coriander Leaves
- 1 teaspoon Mustard Oil
- Salt-to taste
For Litti Dough
- 2 cups Wheat Flour
- 2 tablespoons Ghee
- 1/2 teaspoon Ajwain/ carom Seeds
- Salt-to taste
- 1/4 teaspoon Baking Soda
For Litti Filling / Pitti
- 1/2 cup Sattu Flour
- 1 tablespoon Mustard Oil
- Ginger-1/2″ piece, grated
- 2 Green Chilly, chopped finely
- 1/2 cup Coriander Leaves, chopped
- 1/2 teaspoon Cumin Seeds
- 1/2 teaspoon Ajwain/ Carom Seeds
- 1/2 tablespoon Lemon Juice
- 1 tablespoon Pickle Spice / achari masala
- Salt-to taste
Instructions
- Pressure cook potatoes. Peel and mash. Similarly steam tomatoes, peel and mash.
- Mix potato and tomato mash with salt, coriander leaves, chopped green chillies, garlic paste and mustard oil. Mix well. Keep Choka aside.
- Mix all filling ingredients and keep aside.
- Knead wheat flour along with ajwain seeds, baking soda, salt, ghee and little water into firm dough. Rest for some time.
- Take tomato shaped dough piece and press into disc. Place the filling in center and close the edges and roll into ball again.
- Bake for 40 minutes till brown evenly. Turn in between.
- Dunk littis with ghee and serve hot with choka.
