Khekse ki sabji
Spiny gourd is known by multiple names within India. People from central part of India, especially Chattishgarh call it as Kheksa. Khekse ki sabji is stir fried version of this recipe using local herbs and spices.

Ingredients
- 1 piece ginger
- Salt as per taste
- Coriander leaves
- 1 teaspoon amchur powder
- 1/4 teaspoon garam masala
- 1/4 teaspoon jeera powder
- 1 teaspoon coriander seed powder
- 1/4 teaspoon turmeric powder
- 1 teaspoon chilli powder
- 2 tomoato, finely chopped
- 250 grams Kheksa / Spiny gourd
- 3 garlic cloves, minced
- 1 green chilly, chopped
- 2 onions, chopped
- 1/4 teaspoon Fennel seeds
- 1/4 teaspoon mustard seeds
- 1/4 cumin seed
- 1/4 teaspoon nigella seed
- 1/4 teaspoon fenugreek seed
- 2 tablespoons oil
Instructions
- Heat oil and fry kheksa till it changes colour. Remove and keep aside.
- In the same oil, splutter pach kode masale (fenugreek, nigella, cumin, mustard and fennel seeds).
- Add onion, green chilli, garlic and ginger. Saute for few seconds.
- Add tomato and salt. Saute till tomoto softens.
- Add spice powders - turmeric powder, coriander seed powder, jeera powder, garam masala. Mix well.
- Add fried kheksa and mix well.
- Add water. Cover and cook for 3-5 minutes.
- Adjust taste with salt and amchur powder.
- Garnish with coriander leaves and serve Khekse ki sabji with roti.
