Kantola ki sabji

Spiny gourd stir fried with spices

Ingredients

  • 4 Kantola, scraped, washed and diced
  • 1 onion, medium sized chopped
  • 2 Green Chili, chopped
  • 2 1/2 tablespoons Oil
  • 1 pinch Asafoetida
  • 1/2 teaspoon Cumin Seeds
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 2 tablespoons Coriander Powder
  • 1 teaspoon Dry Mango Powder/ Aamchur
  • Salt as per taste

Instructions

  1. Heat oil. Splutter cumin seeds and jeera.
  2. Fry onions and chillies till onions are translucent.
  3. Add turmeric, red chilli powder and coriander seed powder.
  4. Stir fry kantola. Cover and cook for 10-15 minutes.
  5. Adjust taste with salt.
  6. Serve kantola ki sabaji hot with roti.
