Kantola ki sabji
Spiny gourd stir fried with spices

Ingredients
- 4 Kantola, scraped, washed and diced
- 1 onion, medium sized chopped
- 2 Green Chili, chopped
- 2 1/2 tablespoons Oil
- 1 pinch Asafoetida
- 1/2 teaspoon Cumin Seeds
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 2 tablespoons Coriander Powder
- 1 teaspoon Dry Mango Powder/ Aamchur
- Salt as per taste
Instructions
- Heat oil. Splutter cumin seeds and jeera.
- Fry onions and chillies till onions are translucent.
- Add turmeric, red chilli powder and coriander seed powder.
- Stir fry kantola. Cover and cook for 10-15 minutes.
- Adjust taste with salt.
- Serve kantola ki sabaji hot with roti.
