Gutti Dondakaya Vepudu
Gutti Dondakaya Vepudu is a tasty stir fry dish from Andhra. It is a simple dish prepared by stuffing Tindora / Ivy Gourd with a special Andhra style spice blend. It goes well with rice.
Ingredients
- 250 grams Dondakaya /Tindora, slit lengthwise without cutting off the bottom end
- 3 tablespoons Oil
- 1 teaspoon Cumin seeds
- A few Curry leaves
- 3/4 teaspoon Salt
- 1/2 teaspoon Turmeric powder
- 1/4 teaspoon Asafetida
- Coriander leaves for garnish
For Stuffing
- 6 Dry Red Chilli
- 2 tablespoons Coriander seeds
- 1 teaspoon Cumin seeds
- 1 tablespoon Sesame seeds
- 1 1/2 tablespoons Chana dal
- 2 tablespoons Dry coconut powder
Instructions
- Roast coriander seeds, cumin seeds, sesame seeds and chana dal in little oil. Keep aside.
- In the same pan dry roast the sesame seeds along with dry red chilies for few minutes. Let them cool and grind it along with dry coconut powder, turmeric powder, asafetida & salt into a coarse powder.
- Stuff this powder in each ivy gourd.
- Heat oil, splutter cumin seeds and curry leaves and fry the stuffed tindora on low medium flame for 5 minutes.
- Cover with a lid and cook for 20 minutes. Garnish with chopped coriander leaves
- Serve Gutti Dondakaya Vepudu with rice.
