Deragong

Vegetable dish made with the tender stalks of  dera aka Alpinia nigra

Ingredients

  • Tender stalks (deragong) of the Alpinia nigra
  • Eggplants
  • Chopped tomatoes
  • Diced potatoes
  • Garlic paste
  • Ginger paste
  • Chillies
  • Cumin powder.
  • Turmeric
  • Salt
  • Coriander

Instructions

  1. Heat oil. Stir fry vegetables and spices. Cover and cook till vegetables are done. Add water if required.
  2. Garnish with finely chopped coriander leaves. Serve Deragong hot.
