Rajasthani Dal dhokali
Dal dhokali is dish popular in Rajasthan and Gujarat. Dal dhokali to explain in simple way is a flour pasta in lentil curry. This version here is of Rajasthani Dal dhokali.

Ingredients
For Dhokali
- 1 tablespoon gram flour
- 1 cup wheat flour
- 1/2 teaspoon ajwain
- 2 teaspoons ghee
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1/2 Cumin seed powder / jeera powder
- Salt
For dal and temper
- 1 cup tur dal
- 2 teaspoons oil
- 1/2 teaspoon cumin seeds
- 1 pinch hing
- Dry red chilli
- few curry leaves
- 1 teaspoon ginger garlic paste
- 3 green chillies, chopped
- 2 tomatoes, chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1 teaspoon coriander seed powder
- Salt
- 1/2 teaspoon garam masala
Instructions
- Mix all dhokali ingredients. Knead into thick dough with little water.
- Take small pieces of dough and press with palm into thin round disc. Punch a small hole in center with finger. This is hand made dhokali.
- Make dhokali with rest of dough. Keep aside. (one can also make dhokali by rolling a piece of dough into roti and cutting diamond shapes)
- Pressure cook dal with water. Once cooked blend till smooth. Add salt and turmeric powder. Keep aside.
- Boil about a liter of water. Release dhokli one by one in hot water.
- Allow dhokali to cook for 10 minutes.
- Heat oil in pan. Splutter curry leaves, hing, cumin seeds, dry red chilli, green chillies, and ginger garlic paste. Saute.
- Add tomatoes, red chilli powder, turmeric powder, coriander seed powder and garam masala.
- Cook till tomatoes are soft.
- Add dal and mix well.
- Add dhokali along with water in dal and mix well.
- Bring dal to boil. Simmer for 3-5 minutes.
- Garnish with coriander leaves.
- Serve Dal dhokali hot with generous ghee.
