Aloo Makhana
Potatoes and foxnuts are popular food for fasting. This simple and quick recipe combines spices with boiled potatoes and creamy makhana to make a delicious fasting food.

Ingredients
- 4 potatoes, medium sized, boiled, peeled and cubed
- 1 1/2 cups makhana / foxnuts, roasted
- 1 teaspoon cumin seeds
- 2 teaspoons ghee
- 2 green chili, chopped finely, adjust as per taste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1 teaspoon lemon juice
- 1/4 cup Coriander leaves, chopped
- Rock salt / fasting salt, as per taste
Instructions
- Heat ghee. Splutter cumin seeds and green chillies
- Add all other ingredients. Mix well
- Adjust taste with salt, lemon juice and red chilli powder
- Serve fasting Aloo Makhana with Rajgira roti
