Aloo Makhana

Potatoes and foxnuts are popular food for fasting. This simple and quick recipe combines spices with boiled potatoes and creamy makhana to make a delicious fasting food.

Ingredients

  • 4 potatoes, medium sized, boiled, peeled and cubed
  • 1 1/2 cups makhana / foxnuts, roasted
  • 1 teaspoon cumin seeds
  • 2 teaspoons ghee
  • 2 green chili, chopped finely, adjust as per taste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon lemon juice
  • 1/4 cup Coriander leaves, chopped
  • Rock salt / fasting salt, as per taste

Instructions

  1. Heat ghee. Splutter cumin seeds and green chillies
  2. Add all other ingredients. Mix well
  3. Adjust taste with salt, lemon juice and red chilli powder
  4. Serve fasting Aloo Makhana with Rajgira roti
