Al Yakhni
Bottle gourd cooked in spicy yogurt curry

Ingredients
- 400 grams Bottle Gourd / Lauki, peel and chop in big pieces
- 1 cup Yogurt / Dahi, whisked
- 2 teaspoons Cooking Oil
- 1 teaspoon Cumin Seeds
- 2 Black Cardamom
- 4 Cloves
- 1/4 teaspoon Asafoetida / Hing powder
- 1 1/2 teaspoons Fennel Seeds
- 1/3 teaspoon Turmeric Powder
- 1 teaspoon Red Chilli powder
- 3/4 teaspoon Garam Masala Powder
- 1 1/2 teaspoons Dry Ginger Powder
- 1/2 teaspoon Salt
Instructions
- Deep fry lauki till cooked and soft. Drain and keep aside.
- Heat oil. Roast cumin, asafoetida, cloves and cardamom till golden.
- Add yogurt and spices. Cook for 2 minutes while stirring.
- Add 1/2 cup of water and fried lauki. Cook covered for 2 minutes.
- Garnish with fresh coriander. Serve Al Yakhni with roti.
