Timur ko chop
Timur ko chop / टिम्मुरको छोप is a spice mix made from Timur / Sichuan pepper and other local spices. It can be used to spice up other food preparations. Timur ko chop is a popular food item in Nepali kitchens.

Ingredients
- 1 1/2 tablespoons Timur / Sichuan pepper
- 4 Dry red chilies
- 3 tablespoons cumin seeds
- 3 tablespoons coriander seeds
- 1 1/2 teaspoons black rock salt
Instructions
- Dry roast all ingredients on low flame till fragrant.
- Allow to cool in separate plate.
- Once cool, grind to coarse powder.
