Makhana bhaji

Ingredients
- 2 cups Makhana / lotus seeds, roasted and crispy
- 2 tablespoons Oil
- 1 Onion, chopped
- 4 garlic, clove, chopped
- 2 Tomato, chopped
- 6 Cashew
- 1 teaspoon Ginger, inch long ,grated
- 1 Clove
- 1/2 teaspoon Fennel Seeds
- 1/4 teaspoon Pepper Corns
- 1 Cinnamon
- 1 Cardamom
- 1/2 teaspoon Garam Masala Powder
- 1 teaspoon Coriander Powder
- 1/2 teaspoon Turmeric Powder
- 2 teaspoons Chilli Powder
- 1 teaspoon Jeera
- 1 Bay Leaf
- Salt As Required
- Few Coriander Leaves
Instructions
- Heat 1 tbsp oil. Roast cashew, fennel seeds, pepper corns, poppy seeds, cardamom, clove, cinnamon for a minute.
- Add onion, ginger and garlic. Saute till onions are translucent.
- Add tomatoes and cook till mushy.
- Add turmeric powder, chilli powder, coriander powder, garam masala powder and stir.
- Allow to cool and grind to fine paste with little water. Keep aside.
- Heat 2 tbsp of oil, temper jeera and bay leaf.
- Add the spice mix. Adjust consistency with water and taste with salt.
- Cover cook for 5 minutes till oil separates.
- Add the roasted makhana. Mix and cook for 2 minutes.
- Garnish with coriander leaves and serve makhana bhaji with hot roti
