Vendakka Thoran

Okra stir fried with coconut and spices

Ingredients

  • 10 Okra (vendakka), cut into small pieces
  • 1 cup Coconut
  • 1 big Onion, chopped
  • 1 tablespoon garlic, chopped
  • 1/2 teaspoon Turmeric powder
  • 2 teaspoons Chilly powder
  • 1 teaspoon Musatrd seeds
  • Few Curry leaves
  • Salt to taste
  • Oil as required

Instructions

  1. Heat oil in a pan and splutter mustard seeds.
  2. Add garlic, onion and curry leaves. Saute till onion becomes translucent.
  3. Add okra, chilly powder and turmeric powder. Cook until okra becomes tender.
  4. Add coconut and salt. Cook for 1-2 minutes.
  5. Serve Vendakka thoran with rice.
