Kadugorai
Kadugorai / Kadug ogare is a quick and easy to make Iyengar special spicy rice dish made with mustard seeds and tamarind. It is prepared as an offering to God on the month of margazhi.

Ingredients
- 1 cup Raw rice, cooked
- Salt to taste
- 1 teaspoon Ghee
- 1 tablespoon Gingelly oil
For paste
- 2 teaspoons Mustard seeds
- 4 Dry red chillies
- Lemon sized Tamarind, soaked in warm water
- 1/4 cup Grated coconut
- 1/4 teaspoon Asafetida
- 1/8 teaspoon Turmeric powder
For tempering
- 1/8 teaspoon Mustard seeds
- 1 teaspoon Urad dhal
- 1/2 teaspoon Channa dal
- 1 teaspoon Groundnuts
- 1/4 teaspoon Asafetida
- 2 sprigs Curry leaves
Instructions
- Grind all the paste ingredients with little water to a paste.
- In a kadai, heat oil and fry temper ingredients till they turn slightbrown. Keep aside.
- In the same kadai, heat oil and roast ground paste.
- Add cooked rice, ghee, required salt and mix well.
- Add the tempering to the rice and mix gently.
- Serve Kadugorai with fried papads or appalam.
