Khaja

Khaja is a sweet dessert where a layered dough of flour and sugar is fried in oil and then dipped in a sugar syrup. Originated and popular in eastern India, Khaja is regular offering to deity of Jagannath Puri.

 

Ingredients

  • 1 cup All-purpose flour
  • 1 tablespoon Semolina
  • 1 teaspoon Baking powder
  • Pinch of salt
  • 4 tablespoons Ghee
  • 2 cups Sugar
  • 2 cups Water
  • 1 tablespoon Rice Flour
  • 2 Cardamom
  • Sunflower oil

Instructions

  1. Knead a soft dough with flour, semolina, baking powder, salt, water and three tbsp of ghee.
  2. Divide the dough into 4 equal balls and roll it into 4 round shaped rotis.
  3. Add a tbsp. of ghee and rice flour in a bowl and mix well.
  4. Layer all the 4 rotis, one on top of the other with some ghee and rice flour mixture in between each roti. Fold them together to form the shape of a log.Cut the dough into small pieces and flatten with a rolling pin.
  5. Deep fry the dough till golden brown on both sides.
  6. Prepare a thick sugar syrup with 2 cups of water, 2 cups of sugar and few cardamom.
  7. Add the fried dough into the sugar syrup and soak for few minutes.
  8. Enjoy sweet and crunchy Khajas.
