Shahi paneer recipe

Cottage cheese cooked in gravy of nuts and spices

Ingredients

  • 2 Bay leaves
  • Cilantro, chopped
  • 1 teaspoon Cardamom powder
  • 3 tablespoons Rose water
  • Salt as per taste
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Coriander Powder
  • 1 teaspoon Garam Masala
  • 1 inch Cinnamon, stick
  • 2 Cloves
  • 500 grams Paneer, diced
  • 3 Green chilies, finely minced
  • Ginger, inch long
  • 4 cloves Garlic
  • 1 large Onions, finely chopped
  • 1/4 cup yogurt
  • 1/2 cup Cream
  • 1/4 cup watermelon seeds
  • 1/2 cup Cashewnews

Instructions

  1. Heat oil. Roast whole spices - Bay leaves, cloves , cinnamon stick. Saute for a minute.
  2. Add onion, ginger, garlic and green chillies. Saute. Cook till onions are translucent.
  3. Add soaked cashew and watermelon seeds. Saute for 20 secs.
  4. Add spice powders - turmeric powder, coriander powder, garam masala and salt. Mix well.
  5. Add about cup of water and cook for 15 minutes.
  6. Remove whole spices and blend to paste.
  7. Heat oil. Fry the paste till oil separates. Add yogurt, cream, cardamom powder, rose water. Mix well.
  8. Add paneer and stir. Simmer for 5 minutes.
  9. Garnish with chopped cilantro and serve shahi paneer hot with roti.
