Lauki Muthia
Steamed multi-flour dumplings bound with grated bottle gourd
Ingredients
- 2 cups Bottle Gourd, grated
- 1 tablespoon Oil
- 2 tablespoons Semolina
- 2 tablespoons Pearl Millet Flour (Bajra Aata)
- 1 tablespoon Rice Flour
- 1/2 cup Whole Wheat Flour
- 2 tablespoons Corn Meal ( Makkai Aata)
- 1/2 cup Gram Flour
- 1/4 teaspoon Soda- Bi- Carbonate
- Salt- To Taste
- 2 tablespoons oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Cumin Seeds
- 2 teaspoons Sesame
- 10 Curry Leaves
- 2 Asafoetida, Pinches
- 1 teaspoon Lemon Juice
- 2 teaspoons Sugar
- 1/4 teaspoon Dry Mango Powder( Amchoor)
- 1 Ginger, Inch Piece
- 2 Green Chillies
- 2 tablespoons Coriander Leaves, chopped
- 1/4 teaspoon Turmeric Powder
- Coriander leaves- For Garnishing
Instructions
- Grind ginger, green chillies and coriander leaves to paste. Keep aside.
- Squeeze bottle gourd and add in all the flours, green paste and other ingredients - ginger, chillies, corriander leaves, turmeric powder, amchoor, soda, oil and salt.
- Knead into soft dough. Rest it for 15 minutes. Make cylindrical balls of the dough.
- Steam muthias for about 30 minutes till cooked.
- Temper with hot oil and fried asafoetida, mustard seeds, cumin seeds, sesame seeds and curry leaves.
- Serve Lauki Muthias hot with coriander chutney
